One of the stages of preparing a wine drink at home is the period of fermentation of the wort, that is, the initial wine material. During this process, enzymes that release yeast, actively promote the conversion of sugar into alcohol. In this case, there is a rapid release of carbon dioxide and a number of other substances, including aromatic. In order to prevent oxygen from entering the wort, a water stopper for wine is put on the neck of the vessel, which is one of the varieties of fermentation pile.
Is it possible to do without this device? According to experts, in the initial stage of turbulent fermentation, the gate for wine or, as it is sometimes called, fermentation dowel, is not so obligatory. At this stage, carbon dioxide, which is intensively released from an actively fermenting wine material, simply does not allow air from outside to reach the wort surface. The pressure that it creates at the outlet of the neck protects the product from the oxidative process, which under adverse conditions can easily cause the formation of acetic acid. Nevertheless, in order to reduce the risk of violation of technology and to prepare really high-quality wine, the water seal is best used from the first days of fermentation. This will save the must from acetic souring in the event that instead of pure yeast wild yeast, found on the skin of berries, was used.

In order to build a water closure for wine, you can use a rubber tube about half a meter in length and 0.5-0.8 cm in diameter. The first end is passed through a cortical, wooden or rubber stopper in such a way that it passes into the bottle for 10-15 mm , and the second is placed in any vessel (for example, in a regular glass), in which cold water is poured. The plug must fit snugly against the neck, and there should be no crevices between the tube and the hole. In order to impart a leak-tightness design, it is common to use molten wax or clay. If the farm does not have a suitable tube and plug, a blood transfusion system can also be used to make a water seal (sold in any pharmacy). Thick needle pierce the lid, which closes the container with the wine material, and the opposite end is placed in a jar with water.
If necessary, the water seal for wine can be replaced with improvised means. This is allowed in the case when a stronger dessert is prepared instead of a weak table wine and pure wine yeast is used. Thus, the water stopper for wine can be replaced with a tightly closing cap with a cotton stopper, and if the fermentation process takes place in an oak barrel, the outlet hole is completely covered with a grape leaf. In addition, at home, sometimes use a flat glass plate. When the pressure of carbon dioxide becomes too strong, it rises, releasing the gas to the outside, and then falls again and prevents air from getting inside.
